Country Boy Bolognese

I bet you wanna know how I made this don't ya? 
 Well imma tell ya.....
1st thing you do is get you some fresh garlic and start smashing!  
Next, heat that pan up and pick apart them basil leaves.....
Now liberally apply salt and fresh-cracked pepper to the meat.
 Yumm it's starting to look good ain't it? 
I dice bell peppers and onions to give the sauce more ova base The manner in which you go about sautéing the veggies is important.  Don't overcook them or they will get mushy...
 Top Sirloin freshly ground from the Amish Market.
 Yes that's a pot I'm sautéing in but it's all I had......

I marry everything together and allow to simmer on low for 15-20 minutes.  During this time I'm tending to the bread and pasta.  The pasta is the foundation of your dish. You could have the best marinara bolognese sauce in the world, but if your pasta is cooked wrong the dish is bunk.  
  Fresh basil along with freshly grated parmesan cheese makes a big difference.

Always allow the sauce to simmer so all the flavor seeps into each other.  Also, this is a good opportunity to enjoy a frosty cold beverage. This is Palm Beer out of Belgium, and it was in Amsterdam that I discovered it.  I usually have a beer with my meal.. Not 5, not 4, not 3....just a beer or two.  Most don't understand how to flush the palate to introduce the next bite of food.  While eating try a few bites, then cleanse the palate w/ beer or wine, have a bite of bread then another bite of pasta.  There's a learning curve but once you get it down, you'll eat this way for the rest of your life.  I learned via London, England through my Mother....

 We use fresh Linguine that's raw so you only need to boil it 4-5 minutes for
  al dente
I cracked fresh pepper then added a little butter and salt after draining.
 As you can see it turned out wonderful and even made City Belle feel better.  She's been a little under the weather lately but she pulled through, she always does.  I may be able to pick up heavy objects but she's much stronger than I ever thought about being.
 It was an eerie night in Gotham.  The nights are getting cooler, the sky is changing colors, and the winds are picking up and it don't bother me a bit.......
