Blueberry Pancakes





Country Boy and I love our weekend breakfast splurges.  We also love Blueberry Pancakes.  I took him to Clinton St. Baking Co. for their famous Blueberry pancakes.  They were delicious, but after a 3-hour wait and $30 later, we decided we wanted to learn to make these at home.  
Fortunately for us, our friends from North Dakota sent us a care package with some locally made "Light as a Feather" pancake mix.  So, we decided to give it a try.  
Follow the recipe on the back of the mix; add fresh blueberries and good vanilla. 
While adding the blueberries to the batter be careful not to crush them.  
I also added a few once the pancake batter was in the pan. 
Don't let this video fool you!  I made the pancakes and did all the flipping.  
But I let Country Boy give it a try!
Perfect browning on one side. 
Voila




































Just add warm maple syrup, a side of crispy bacon and you're ready to serve.  
We added fresh blueberries as a garnish just to dress it up!
